Hot Tamales, This Is The Best Burrito Casserole!

It is so easy to get caught up in the day to day of life and what is going on and totally forget to stop and make a few home cooked meals every now and then.  I know I am guilty of being in the McDonald’s drive thru far too often, but I have learned that when I prepare for success, I always have something amazing on my table in no time.  Yep, I prep this before hand so once I get home, even if I am in a rush to get out again, I can pop this in the oven while we all shower and in no time, we have cheesy, gooey burritos smothered in delicious sauciness.

Yep, I think this is my family’s absolute favorite meal!

 

 

Ingredients

1 pound of ground beef

1 small onion, chopped

1 pack of Old El Paso taco seasoning

1 can Old El Paso refried beans

1 can Campbell’s cream of mushroom soup, undiluted

1/2 cup Daisy sour cream

1 pack Old El Paso large flour tortillas

2 1/2 cups of Kraft shredded Mexican blend cheese

 

Instructions

Preheat oven to 350 degrees.

In a large skillet, cook the ground beef and onion until the beef is no longer pink and drain.

Add the taco seasoning and refried beans and heat through.

In a separate bowl, blend the mushroom soup with the sour cream. Then spread half of the soup mixture in the bottom of a baking dish.

Add a layer of 3 flour tortillas to the top of the soup mixture. You will need to cut or tear the tortillas and overlap them.

Spread on a layer of the ground beef mixture and top with about a cup of cheese.

Repeat all of these layers and top with the remaining cheese.

Bake in a 9 x 13 baking dish for about 20 minutes until cheese is nicely melted. Enjoy!

Quick Tip: add a can of green chilies for a little punch of flavor, or some  jalapeño peppers for an extra kick, too.
