Hot Tamales, This Is The Best Burrito Casserole!

My family adores Mexican food.  We are Hispanic by descent, but not Mexican.  However, we tend to like our Mexican food more than the food from our culture.  I am not sure why, but I think it may be because of how simple and easy it is to make Mexican food and yet how fun it is to make and how positively delicious it is.  There are just so many elements of this cuisine that enchant me, beginning with how easy it is and how deep and rich the flavors are.

 

I cannot believe how simple it is to make not only regular fajitas or tacos, but Mexican casseroles as well.  It is something amazing to me, because when you have a few kids to feed, you really do not have time to be preparing so many little tacos and fajitas.  Instead, I am so grateful for casseroles like these that I can prepare the night before I go to work and have it ready where all I have to do is pop it in the oven on the day of. Simple, full of flavor and totally delicious.  Oh, and the kids love it!  There is nothing better than knowing I made something my kids love!
