These 3-Minute Easy Cupcakes Are As Easy As 1, 2, 3!

This easy cupcake recipe is very useful most especially when you have visitors coming over and you didn’t have the time to prepare anything beforehand. This usually happens to me because I have a habit of being absentminded whenever I am juggling a lot of tasks at the same time.

Our friends over at Mr. Food have this to say about this recipe:

“Need a quick snack for the after-school crowd? Please all the little ones in your house by popping some Three Minute Cupcakes in the microwave. These easy cupcakes are not only ready in a flash, but they’re easy and tasty!”

These cupcakes really please the little ones. Chiyo almost always behaves whenever he has a cupcake and milk with him and that’s a rare feat. Well, it’s always food when it comes to my sons. Like mother like sons, I guess.

Ingredients

1/2 cup Domino sugar

1/3 cup Gold Medal all-purpose flour

1/3 cup Hershey’s unsweetened cocoa

1/4 teaspoon Clabber Girl baking powder

1 Eggland’s egg

1/4 cup Kraft mayonnaise

1/4 cup Borden milk

Instructions

Line a microwave-safe 6-cup muffin pan with paper liners, or place paper liners side by side in a microwave-safe 7-inch by 11-inch baking dish.

In a medium bowl, combine all ingredients and mix until well blended.

Spoon mixture into paper liners and cook in microwave at 80 percent power 3 minutes. Remove cupcakes and let cool before serving, or frosting, if desired.

For serving, you can make these really festive in no time by frosting cooled cupcakes with your gang’s favorite frosting-homemade or store-bought-and topping with colored sprinkles. Oh, and remember to use paper, not aluminum, muffin liners in microwave oven.

Quick Tip: Did you know that chocolate melts perfectly in the microwave? Simply heat it at 80 percent power, uncovered, until shiny and almost melted, then stir until completely melted and smooth.

Thanks again to Mr. Food for this amazing recipe.
