This Dressed Up Irish Stew Will Bring Out The Leprechaun In You!

The first thing that comes to mind whenever I hear the word Irish is a leprechaun. It’s a fairy in the Irish folklore that’s a bit mischievous. I often hear the term “leprechaun gold” and how it always vanishes at one point. Whenever we’re all gathered in my parents’ house for a visit, Mom always cooked the most comforting food. Usually, it’s a form of stew and a fruit pie. Stew and pie always meant comfort to all of us. During our last visit, Mom had cooked us this dressed up Irish Stew. Instead of the usual meat, Mom had used lamb. Lamb has this distinct taste that always gives a different but welcoming flavor to any dish.

Still, most of us weren’t fans of lamb meat so we were a bit cautious while having our first taste of the usual dish that was given a twist. A few minutes later, everyone was burping their thanks and everyone’s bowls were empty. “Leprechaun stew huh?” I just had to ask in reference to the infamous leprechaun gold. Well, all of our plates were empty as if they weren’t full in the first place. We all laughed at my statement, but Mom was wearing the most smug smile.
