Watching Your Figure? This Scrumptious Lunch Won’t Wreck Your Diet

My husband was a little suspicious when I told him we were having salad for lunch… He’s the kind of guy who loves his sandwiches, stews and omelettes, so he was worried he wouldn’t have enough energy for the rest of the day if we were “only having salad”. He did give in, though, once he heard there was steak involved! And he actually loved it so much, he wanted me to make this again the next day!

I like to add a little bit of this and that, to keep things fresh every time I make this salad. I love adding grated carrots, sometimes thinly sliced red cabbage, or using different kinds of nuts.

 

Ingredients

2 cups greens

2 cups romaine lettuce

2 oz. balsamic vinaigrette

1 ounce gorgonzola

1cup walnuts

2 oz. thinly sliced steak

optional: grated carrots

 

Instructions:

Cook the steak to your taste.

Combine your greens and romaine or any other salad you decide to use; add balsamic vinaigrette and toss. Sprinkle with crushed walnuts and Gorgonzola cheese. Place the cooked steak on top and serve.

Quick tip: If you don’t like walnuts, use your favorite nuts instead.
