When I first heard my friend had made a meatloaf out of ground turkey, I thought it was possible a little bit on the dry side. I was so wrong! The spinach and the mushrooms bring so much moisture and beautiful flavor into this that you definitely don’t have to worry about this being tasteless.

I created this recipe for a tasty healthy moist turkey meatloaf. This recipe is made with salt free seasonings. There is so much flavor you do not even miss the salt. My husband loves this dish served with mashed potatoes, creamed spinach and turkey gravy. Hope you enjoy!

1 lb organic ground turkey breast
6 oz fresh baby spinach – chopped
8 oz mushrooms, chopped
2 celery stalks – finely chopped
1-2 shallots – finely chopped
3 cloves garlic – finely chopped
1/4 c 1% milk
1 c Italian cheese blend – shredded
3 Tbsp Bertolli olive oil, extra virgin
2 Tbsp Earth Balance buttery spread
2 Tbsp salt free Perfect Pinch all purpose seasoning
2 Tbsp salt free Perfect Pinch garlic & pepper seasoning
1 tsp pepper
1 tsp McCormick garlic powder
3 slices whole grain/whole wheat bread – cubed small (you could use gluten-free bread)
Preheat oven to 375 degrees. Spray a loaf pan with cooking spray.
Heat olive oil in a saute pan over medium heat, add mushrooms and celery, saute for 3 minutes, add shallots and saute for an additional 2 minutes. Add chopped garlic and saute for an additional 1 minute. Next, add spinach, season generously with salt free seasonings, and pepper, saute until spinach is wilted. Remove from heat and let cool completely.
Melt butter in a saute pan, add bread cubes (use gluten-free if you want to make this suitable for people with celiac disease) and saute until toasted a little, season with salt free seasonings, garlic powder, and pepper. Remove from heat, let cool completely.
Whisk the egg and milk together and set aside.
Mix together the bread, milk and egg and in a bowl, then add spinach mixture and stir. Add the ground turkey and mix thoroughly with hands, add cheese, mix and form into a loaf pan.
Bake for 1 hour.
