This Busy Day Rice, Cheesy, And Ground Beef Bake Is Perfect Any Night Of The Week!

How many times have you been to a party or picnic and some elderly lady brings a jello salad with all sorts of little fruit pieces and whatnot in it? If we are counting just church potlucks alone I’d have to say somewhere around 45,000 times. And guess what?

I never ate them. I just assumed they’d all taste like crap and I’d be disappointed. I mean, jello has never really been my cup of tea.

However, the other day, my southern pal Sally came over with a slice of Southern Sunshine jello mold and insisted that I try some. So, I reluctantly did. Wow! It was insanely good. So, this is what I’ve been missing all my life?

This lazy day dinner is comfort food 100% perfect. The great thing about Busy Day Rice Casserole is that you don’t have to cook the rice beforehand. That saves you a lot of prep time. You do have to brown the ground beef before you put it in the casserole, but it only takes about ten minutes. This ground beef casserole uses just six ingredients, and the combination works well. Use you choice of Colby Jack or medium Cheddar cheese to top it all off. – Recipe Lion
