Amish Church Soup – It’s A One-Kettle Wonder!

I am absolutely smitten by this Amish church soup. It only contains 5 simple ingredients and is so easy to make you’d think it came from a cafe. I’m telling you, it’s very good and you gotta try it!

My daughter, who is 16, helped me make this soup after we both got to sample a bowl at one of our Amish friend’s farms. The soup tasted so good and really felt nice in the old tummy. I wasn’t feeling very well that day and I swear this Amish church soup cured what ailed me.

It’s a very soothing, comforting soup and I know you are going to love it just as much  as my family and I do.

The directions indicate “A Mason jar that contains preserved beef in it. A common practice amongst the Amish people. Feel free to use your own version of this ingredient such as leftover beef roast”.

then wheres the liquid it shows in the pot? this recipe is incomplete as I assume we just guess at what the liquid is and how much??

If someone is going to take the time to, not only, post a recipe but also give a synopsis about it, make the damn thing complete.

Actually this probably is complete to the Amish. These are the kind of recipes that my Pennsylvania Dutch great grandmother would give us. She just expected we would know what she was talking about. The person posting the recipe was probably posting it as she received it. We as a society need to calm the heck down and not get so excited or rude about a recipe.

It is complete, use what beef stock you have from roast, add enough water to cook the noodles and potatoes. When one cans beef, you pack as much in a quart jar as it will hold and fill it with how much water it will hold and process it.

So basically, when the pot roast is done; Don’t throw out the juice, last portion of meat or shreds, deglaze the pot with hot water add an new potato and left over noodles from another meal and make Soup instead! lol

A quart of beef is about 2# of cubed beef.
The beef is cubed and placed raw, along with a level tsp of salt, in quart jars and pressure cooked for 90 minutes. It keeps in the pantry for a long time. When we do this, we process 60# at a time, yielding 60 quarts of cooked beef. It is handy for making quick week night meals! (And tastes much better than store canned meats!) – Charlotte

It means “canned beef”. This is meat that has been cooked, as the recipe indicates by saying left-over roast, stuffing this meat into a glass mason jar, put the lid on and put the jar in a pressure cooker and “can” it per pressure cooker directions. Directions for this can be found in most “canning” cook books. Or, you can buy “canned” beef at the grocery store. Ask your cashier. You can find precooked beef in the freezer section nowadays which would work just fine.

One quart of beef would be approximately 2 pounds…thus “a pint’s a pound the whole world round.” Two pints to a quart=2 pounds to a quart.

I know that sometimes the simplest is the best, but potatoes and noodles in the same dish? The carbs are prohibitive to a diabetic. And no vegetables?

From a person who’s diabetic, I agree with the others: this dish probably isn’t for us, except in very small amounts. I’d recommend vegetable soup: veggies AND low carbs. There you go. 🙂

how about turnips for the potatoes and making your own noodles from other veggies? that might work. however, making it simple would involve making and drying the noodles ahead of time.

Lorraine, I cook for diabetics and when I see a recipe like this, I start thinking about cooking in a diabetic mode. You can buy miracle noodles (no carbs, no calories – just cook them 10-15 min. instead of 8 as suggested on the package.) and instead of beef used Beef broth, (no calories or carbs) and the potatoes and what ever other vegetable you want. I personally will probably use canned tomatoes. No one can tell the difference and very low carbs and calories per serving.

That’s correct… You have to tweak it a little…. I’m not diabetic but I do like eating healthy….

I live in PA Dutch country and noodles and potatoes together is very common, although it may sound strange to the rest of the world. This is right up the alley of PA Dutch cooking!

I live there too, Pat! And you are right It is very common and so good!!!! IF it does not fit your diet, do not make it!! What is all the fuss about? I personally would add some carrots and celery. But the Pa. dutch had large families and I think that is the way they could afford and stretch their food budget. Besides you will will not see any of those people setting around. They all work from 2 years old, from day light to darkness, so they worked off any of the bad that might be in this soup!!! Just saying!!!:)

use gluten free noodles, small red potatoes add broccoli , and cauliflower, improvise to your diet use less of bad thing more good stuff

As a diabetic, I substitute rutabaga for potato in soup recipes. No one, even the picky eaters, can tell. A noodle replacement, not so easy. Perhaps halve the noodles and use other vegetables, squash or spinach? I rarely eat carbs. If a few noodles swam into my spoon, I’d enjoy the moment.

I wonder if the Amish are kinda clean of diabetes maybe their diet? they don’t get sick much . Diabetes is mostly a diet/nutrtion problem, the dr normally recommends change your diet and exercise..

Noodles and potatoes are great together. Add any veggies you like: that’s what soup is for. If you’re diabetic, look elsewhere.

You are not eating the whole pot. I too and a diabetic and I would have 1 bowl and freeze the rest. Or don’t use potatoes and add more veggies.

I use one potato to a pot of veggie soup but I can get about 5 bowls out of that one pot. Not enough potatoes in one bowl to hurt anything.

Replace the noodles with spiralized zuchini and the potatoes with cauliflower! Problem solved, you have your veggies and less carbs!

oR USE jicama root for potatoes. lower in carbs is a root veg. and packed with nutriets and vitains that would I think make it ok for an occasional diabetic treat…I would say sub the noodles for spagetti squash for noodles, but I think that would change the taste or purpose of the soup.

I would sub spiralized zuchinni or low carb noodles aand dark fleshed potatoes. I would also correct two hours after first bite with my insulin and 20 minutes activity after meal

Diabetics need carbs just a limited amount, Just have a small bowl and nothing to stop you putting in some peas or serve with broccoli. Being a diabetic just means eat sensibly.

Well it IS an Amish recipe. I doubt Amish have problems with diabetes, as hard as they work and they eat off of the land without all the junk we have to deal with. So they are not worried about the carbs.

You can eat anything in moderation. Just add a side of vggies..that simple. I am diabetic and just went to a dietician yesterday so it is fresh in my mind.

These are recipes for people who work farms physically all day. It is not a diabetic cookbook recipe. It says you can modify it however you like. Thus, you can leave out the starches and add whatever vegetables you want. Do people really have to hold our little hands every step of the way every day all day for life? Use your intelligence, and READ THE WHOLE STORY.

Do you folks not know how to cook. Use broth and meat of your choice, either home made or canned. Geez Louise, surprised you don’t expect someone to cook it for you too.

I would use a quart of Swanson’s beef or vegetable stock. Use beef if you want a richer soup. Or use vegetable if you want a lighter more veggie tasting soup.

Karen, I have made this soup using canned Corned Beef. I just added water till it looked like enough, however soupy you want it. I have also made dumplings instead of the noodles. Add a can of diced green chili’s, it’s really good! I put pepper flakes on the table for those that want a little extra flavor.

This sounds like they mean leftover beef? If it were already cooked and shredded or cut up, it wouldn’t be a factor. That would make sense if it were one kettle; otherwise, you’d need another pan for cooking the meat.

my grandma was amish and I remember her making this, the beef was cooked because she would use her canned beef that she did.

Liquid to the package noodles direction with the diced potatoes and onions together. Salute the pound of ground beef or whatever meat used. Add to the soup noodle mix. Add water or broth if too thick.

I chopped the potatoes into half inch cubes, added rice instead of noodles into the same water, added au jus, into the same water, boiled for about 20 minutes, as a time saver, I fry up my hamburger with onions and garlic ahead of time, put into a zip lock bag to use for the next 2 or 3 meals where I will be needing burger with onions and garlic already in it, so added a couple of cups of this to it all. and it did take only 30 minutes all together!

You would brown the beef & drain before adding to the pot. I would think a 32 oz carton of beef broth would be delicious in this recipe!

If its previously canned is already cooked to perfection. Just add it to the pot it also has its own broth, you can add morw water or beef broth if you want to.

Again, the canned beef is preserved in advance. You can use leftover pot roast, made in advance. If you don’t have any ingredients on hand, yes, it will take longer than 30 minutes. But if you do have the ingredients, throw it together. Common sense – cover everything with stock or whatever and let it cook down; taste it! If it is perfect, then eat it. If you like it thicker, cook it down some more. If you like it thinner, add some more stock. THINK.

I can remember my grandmother putting potatoes in a lot of soups… chicken noodle… ham and bean…. My Mother use to say that it was more filling and it stretched the soup farther… Like you say… when you were poor… you looked for filling a lot of tummies and kept them full.

If you’re implying that the Amish are poor, you don’t know much about the sect. They live a simple, plain life, but it’s certainly not because they have no money!

I have always been poor, even working full time, I find the best thing to stretch my food dollar is to never serve hamburger without additives like onions, bread crumbs, garlic, you can still fry up a burger using the meat this way, but it goes even further if you make casseroles instead of burger. also, try one meal with no meat if you can find recipes that your family will eat that way, try 2 times a week using a different recipe, find five and switch them around!

I think that is supposed to be beef stock or ground beef. If you read the directions, it mentions beef, or beef stock. But if you boil the ground beef using beef stock as the liquid, you will serve double duty. I tried this once before and it was great.

Quarts and pounds cannot be equated, one is a measure of capacity and the other a measure of weight (or mass) Well there’s a saying “A pint’s a pound the world around” and there are two pints in a quart so it should be one half of a quart= one pound. A pint is 16 fluid ounces of water.

Often the Amish home can their meat for the winter in canning jars. As no refridgerators. My guess would be use 1&1/2 lbs beef.

I am going to assume the recipe means: 1 quart of beef base (broth), then add your beef pieces (roast beef or cooked ground beef – as much as you want (1 pound)?) at the end as the recipe says. I would partially cook the diced potatoes in the microwave first, as pasta and potatoes cook at different times and levels.

Not beef broth. Canned beef. You get a quart mason jar, stuff with pre-cooked beef, put a lid on and “can” it per directions for pressure cooker. You can find directions in almost any book on canning your food at home.

Barb it’s a quart jar filled with beef. The Amish can a lot of things and beef is one thing they can because they don’t have electric appliances like freezers to freeze their beef so they can it to preserve it. Hope that answered your question.

I think the quart of beef probably refers to a a quart jar of beef which would have been preserved. The meat would have been cooked already and would provide the broth needed. Home canned beef (or venison) is very tasty and convenient.

I found out from my Sister who reads lots of Amish books and doesn’t live very far from a bunch of them a at of beef is the meat that they can. I went ahead and used hamburger and beef booth. Tasted good!

Being diabetic, I appreciate the carb concern. But if you are doing farm work and without machinery, they can eat a whole pot of this plus a loaf of fresh bread and not care about carbs! 🙂 Might not be a good one for the type 2’s out there. I would, however, also like to know what a quart of beef is. Was that to say beef stock?

I am guessing it is home canned beef. Our family lived on canned venison that was cooked and ready to use out of the quart jar.

Some people can meat. So a quart of beef could mean a quart of something they canned. I have canned venison and I thicken the juice and we have hot meat sandwiches.

Amish process some of their meat in jars for storage. It would be similar to cooked Stew meat or a tender roast with the broth.

Don’t the amish cure their beef in quart jars? so what can we sub another beef and if so how much broth. I would like to try but you have to let the beef cure for awhile I think. I could be wrong. but I would like to try; It sounds yummy. But I want to give it a fair shake from authenticity.

Along with canning fruits and vegetables, many people can meats, all kinds of meats. The quart of beef referred to in this recipe is a quart jar of cooked, chunked beef or it could be hamburger meat.

Some people can Venison & some can Beef. It is done in glass quart jars. Preserves beef or venison, on the shelf, without needing it to be cold, for a very long time, & is really delicious. I’m not sure if it can actually bought anywhere.

I wouldn’t get too hung up on the “one quart” part. Just add enough pre cooked beef to your liking. Left over pot roast would work well.

I believe the quart of beef is a “canned” beef that the Amish can themselves, in the same manner one would can quarts of tomatoes. The best substitute would be a leftover roast or any other cut of beef that you have on hand. If the beef is fresh, go ahead and sautée or bake/roast it until it’s tender.

Home canned beef, the old fashioned way.
I’d use stew meat or round steak or rump roast or hamburger. Cut it into small pieces, brown it. Put in soup kettle, cover with water and simmer until tender. Then add potatoes, noodles, onion, etc. and the amount of water or beef broth to cover or a couple inches above it. bring to a boil and then simmer(lightly boil) until done. Stir so noodles don’t stick together or on the bottom of your pot.
Left over Roast beef could be used and its juices.

Probably the quart of beef is referring to home canned beef. If the amish raise their own beef, they probably can it. I estimate it is about 1.5 to 2 lbs of pot roast or chuck roast cut into 1 inch cubes.

They omitted the word, “stock.” One quart of beef stock (or broth). You can buy it packaged in the soups aisle of the grocery.

you could bake chuck roast on low temp. covered with some water added until very tender 2- 3 hours do not discard the juice and fat that is where the flavor comes from. It will not kill you Amish live forever and they eat rich food everyday!

I am sure the quart of beef would be canned.. processed beef… My grandmother use to can it… it was sooo good and tasty and convenient… we se to open a jar and heat it up adding a little water and thickening the juices and having it over Mashed potatoes…

In looking at the recipe ingredients the 1 quart of beef has to be beef broth. Otherwise there is no liquid in it and it’s hard to make soup without liquids!!!

It has to be cooked in a pressure COOKER CANNER………..JUST A PRESSURE COOKER WILL NOT GET HOT ENOUGH

my guess is that a quart of beef is home canned beef. delish!! we used to can beef when I was a kid. wonderful in beef and noodles so should be great in this soup. where you would find something like that in a super market is a good question.

just thought, I guess your solution would be to cook chunks of beef by itself to make your beef stock then add the other things. of course would take much longer than 30 min but would work.

go out to your barn, whack off one of your cow’s legs, take in the kitchen and do it up to can, then you will have a quart of beef when this comes up again. do you know how to can? go to your amish neighbors and see if they’ll sell you one. quart of beef, that is. vwa lla.

Linda just add a package of Stew Beef. I grew up in the country, my Mom and Grandmothers made this. We just called it Beef Stew, I loved it so much, I called it White Stew. So Mom always knew which Beef Stew I wanted. Mom often left the noodles out. She would make it both ways.

You can buy canned beef in grocery stores. by the tuna or canned chicken isle. Hope this helps. I bought 2 large cans of cooked beef in sauce . its really good.I figured 2 large cans would be close to 1 quart.

People used to preserve food by canning it (as in Mason jars). A quart would be about 4 cups of shredded or chopped meat. In a recipe like this, measurement does not have to be precise… You use what you have. Good luck and hope your soup turns out great.

They home can the beef in a quart canning jar in the pressure cooker. All you need to do is cook 2 pounds of stew meat then proceeded with recipe.

Must be beef that is already prepared, as it’s not cooked with the other ingredients.
Also, 1 quart of beef would make sense, if thinking of large amount of servings.
The amount of liquid has to be determined by the person who cooks this soup.

A quart of Beef, is about the amount of burger it would take to fill a quart container. I’ve ne er heard of anywhere selling beef..in a quart. It is an unusual recipe. It should read approx how many lbs..like most.

The Amish can their own meats just as they have big gardens. They can live with out a supermarket. When they processed their meat they cooked it and put in quart jars. I remember My folks during that and I am not Amish

They are talking about beef broth, Amish would have canned their own or used it from cooking other beef earlier. I know that canned beef and pork are delicious for soup. They are not poor, if you have ever visited them, you would know. Later in the recipe it says you can put actual meat in it if you wish.

I think they might be talking about canned beef that you can buy in the grocery store like Publix, Kroger or in a Amish type of market. Kay

I buy large pkgs of ground beef & separate to freeze using qt size zip-locs. Each bag holds approx. 1.25 # when pressed flat for freezing.

The amish can their own beef so that is why they would have a quart jar of beef. In the Midwest our groceries stores sell quart cans of beef. A quart of beef would be 4 cups.

You must realize in an Amish home most of the meat is probably canned.
If you can’t figure out how much to use by guessing get a wide mouth quart Mason jar and fill it up. You could use ground beef or stew meat cut a bit smaller.
Not to be a downer but I wish more schools still offered home economics classes.

try just cooking 1 16 oz pkg of beef in the pot of water with the potatoes, onion, noodles, etc., and throw whatever veggies ya got on hand in it, add salt and pepper and don’t piss and moan……eat it, enjoy it, and shut up!

Well obviously the picture shows a larger quantity then the ingredients. If it is only 4 potatoes, I would say it would be a pound of beef. The only time I have seen a quart of beef is in some Deli’s and it is usually a type of roast/stew meat precooked.

28 oz. ( 1 lb. 12oz) can of beef with juices. Don’t know why a person couldn’t add some fresh chopped cabbage, spinach, kale, squash…at the end to add vegies…improvisation! 🙂

I’ve done a search to find out what one quart beef means, and every Amish Church Soup recipe I’ve found has been:
3 cups Navy beans, cooked, 1 Onion, 1 Salt and pepper. Bread, 1/2 stick Butter and 4 cups Milk. Brown chopped onion in butter. Add beans and milk. Bring just to the boiling point. Add bread cubes and salt and pepper to taste. Nothing like this recipe at all.

1 Quart of beef is just that. The Amish, like other country folk, can their meat. Good rule of thumb is that 2 lbs of roast beef/hamburger will fit in 1 qt, whether canned or frozen. You make it by canning the meat, long way. (It’s short if you already have it on hand to throw this together, the meat is already cooked.) You can add the beef and do this in a crock pot to get similar results. You can also boil a beef roast for similar results. I also use a tbs or two of Better Than Bouillon beef flavor to give it better flavor and depth. As to folks complaining about carbs etc, please accept this for what it is. Amish families have a lot of mouths to feed, so look for economical ways to eat, and they are whole foods, not processed store crap. Furthermore, the Amish are very active people, they don’t sit at a desk in the city. Most get more than enough exercise and don’t have to worry about the carbs and diabetes. This is a good lunch soup when working on the farm. Quick to throw together, sticks to your ribs when you are out in the cold working in the fields, milking cows etc. I know, I come from a farm family and grew up with many Amish neighbors. The suggestion above to substitute zuke noodles is a good one; I also recommend black bean noodles. They taste awesome, and are good protein and also works for gluten free diets.

Also add some mushrooms…I’d use portabellas…and if you wanted to celery and carrots…and it looks like spaghetti was used instead of noodles. To be a truly economical recipe use whatever you have…that makes the best soup!

And what is a “package of noodles,” and how big? Ramen, Barilla…? Sorry, but this recipe needs rewriting with better details.

That looks like Spaghetti to me and no respectable Amish would use a package of noodles, they would make their own, but it looks good . I probably would not mix two starches though.

The Amish tend to can everything including their meats since a lot of them don’t have refrigeration or freezers if the winter was light and they don’t have the ice to keep the frozen foods frozen. So a quart of beef would probably be about a pound or two depending on what you could pack into a quart jar. You could use cut up beef or you could use hamburger. It doesn’t matter which form you use, use a little or use a lot, it doesn’t matter. There isn’t a lot of measuring. It’s a sort of toss in what you have type soup which is what a lot of Amish or homemade cooking is. Don’t be so hidebound guys LOL!

Ingredients

1 onion, chopped
½ stick of butter
3 cups cooked navy beans
4 quarts milk
bread, cut into bite sized pieces

This recipe needs clarification please — one quart of beef what? cook the potatoes, onion and noodles together in what? water? how much? strain off water after cooking? sorry, but this is less than simple, it’s a mystery …

I am assuming it is canned beef. I have seen it in walmart. If I made this I would add celery and substitute the potatoes for water chestnuts and bamboo shoots and the noodles for soba or even ramen noodles (beef flavor) and use the flavor packet to add more flavor.

If you were Amish, you would have canned some beef. The
alternative would be to buy from the grocery or meat market beef
in a can. Canning meat is really helpful to have if you want
some quick cooked meals.

One quart equals 2 pounds. This may also be where the liquid comes in. I think I would use 1/2 water and 1//2 beef broth.

Seriously? You guys can’t figure out that “one quart of beef” is “one quart of beef stock”? This is soup and there are no liquids listed in the ingredients. It doesn’t take a whole lot of reasoning to figure out that it’s stock. And, just so you know, you do not have to run out and purchase brand name salt and pepper.

Obviously the first ingredient is 1 quart beef STOCK or BROTH (liquid). We’ve all had typos and the horrid “auto-correct” change things on us or delete. As for veggies, add what you want. This is a simple, cheap, satisfying soup. Ease up folks.

How about get some stewing beef cook in water till dome sperate into pieces then add broth and meat into a onw quart container.. There you have one quart of beef!~My question is how much liquid to cook the potatoes and noodles in.. Not a very informative recipe!

Quart of beef is most likely one quart of canned beef. The Amish can most of their meat and produce. It would be pre-cooked with enough liquid to cover the beef.

After 4 attempts to find out what “1 quart of beef” is, I think it must be a typo. I think it should read “1 quart of beer”! See, now that makes sense. We all know what a quart of beer is.

The Amish usually can their own meats, so it is probably the amount that would fit in a quart canning jar-approximately 4 cups of cooked cubed beef.

I’m going to guess that ‘a quart of beef’ is just what it says. Probably shredded beef in a quart jar. I’m thinking the Amish don’t slaughter their livestock and then freeze various cuts. If they’re like my [non-Amish] great-grandparents, they actually do can meat just like they can fruit and vegetables. So — a quart jar of beef probably has some juice to it, but either way, that’s 4 cups.

cook the beef in the pot 1st.. add water then the rest of the ingredients. Basic 1-0-1.. if you want it really good take the time to make home made noodles.. or home made dumplins.. Still only takes 30 minutes. If you cook any at all

People used to home can beef, and I bet the Amish still do, but I don’t know if that’s available commercially. The recipe seems incomplete. You would have to cook the onions, potatoes and noodles in some kind of liquid. Why not use the beef stock? The Amish probably make their own noodles, not in a package.

Good grief people a quart of beef is the same as a quart of mayo or 30 oz. or 4 cups. Now I know people are being smarty nobody is that dumb. If you are then you don’t need to be cooking. To the woman about the diabetic use spaghetti squash and leave out the potatoes or put cauliflower instead.

I have made this dish with canned Corned Beef. I like to skip the noodles and add carrots, diced green chili’s (canned), celery and/or bamboo shoots (whatever you have on hand). I put a jar of Red Pepper Flakes on the table also! Sometimes I make it with dumplings. Yummy!!!

we it is a church soup I googled it and it seems like it is a half a cow, that is about five pounds flank steak kind of a big recepie for me.

At first the same question came to mind, but it seems like a quart is 4 cups of beef. I think this could also be served with either potatoes or noodles for those who have a preference or dietary restrictions, and if you are in doubt cook the beef before you add it to the mix. It’s better to feel good about what you are serving your family rather than worrying about the meal. I might throw some garlic in there for my family. Not sure it needs a sandwich, it seems like a rather hardy soup/stew.

That recipe is sure pretty vague. What is a quart of beef? What kind of noodles? What kind and size of potatoes? What kind of liquid – water, broth? How much? If you are going to share a recipe at least, please, make sure it is complete.

Are the noodles like the ones you would put into home made chicken noodle soup? Did you shred the beef or cut it up?

The Amish do not have electric so they can all their food. A quart of beef is a quart mason jar full. It would be fully cooked when ready to use.

Going to try this. Sounds awesome, canned beef would work fine since it already has the base. But I’m not that Lazy that I can’t cook the beef. The way I see it add veggies if you want,more filling. Plus a diabetic should know how much they can eat.

This is probably an old recipe form the time when everythi gwas canned to preserve it. They canned their meat as well as garden vegetables. So they took “a quart of beef” from the cellar to make this dish. Just estimate the amount if beef or add as much or as little beef as you like.

When I was growing up at home, my mom canned beef when we butchered because we didn’t have a freezer. The freshly slaughtered meat was cut into small chunks, packed into glass quart jars, a teaspoon of salt was added and then the jar filled with water to about an inch from the top. The lid and ring was put on the jar and then they were placed in a pressure cooker and the directions were followed on how to can the meat. I can remember mom making homemade noodles and opening a jar of the delicious beef with the broth and having a quick meal after church. It was undescribebly delicious! For a variation sometimes she would peel potatoes and add carrots or make vegetable soup with the canned beef. I don’t know if this is what the recipe means by canned beef but this is what it meant for our family. YUM.

This recipe is not one many people would understand if they are not from an area where “old fashioned” cooking abounds! A quart of beef is a quart jar of home-canned beef – – – – something that was done before freezers came along. This method is still practiced among the Amish and probably even by some frugal “English” (term used to mean non-Amish). I am sure you can cook a small beef roast and use that and the broth from it in place of the home – canned beef.

We aren’t Amish but my dad made this all his life here at home. He’d be 105 now so it’s been around a while. He’d just get a small cut of beef and either put it in the water and shred it later or cube it up. The only thing different is he would add a quarter or two quarters of cabbage if he had it and a few whole carrots. Still my favorite soup. Such flavor. You can’t make a mistake, add or subtract what you like, that’s the fun of cooking.

Amish people do not freeze. They can their veggies and meats. I have done it as well, and the results are great. What I would have to do here is use leftover roast.

I substituted angle cut diced carrots rather than potatoes.. I also used 1-1/2 lbs of cubed beef stew meat. Like other I had no clue what one quart of feef is?

A quart of beef is hamburger that has been canned. It would be the equivalent of about 2 lbs. of hamburger from a store. You could buy some from a colony where they can beef or other animal products or brown your own, then throw it into the pot.

I make this minus the noodles and the dimly called it Norwegian Hash. Awesome with bread and butter. I use ground beef.

Wow-okay gals, not judging here in any way-it’s just so obvious that there are a lot of people here that don’t know to cook from scratch and don’t know how to substitute. So…let me see if I can help some of you out. A quart of beef is 4 cups of meat. From the picture it looks like they used small bite size pieces. Personally, I don’t like having to spend the $ on pre-cut “stew meat” when I can buy a bigger steak or smaller roast especially if on sale or if they are trying to get it off the shelf because of ending date, so discount it and cut it up myself to the desired size I want, for a whole lot less $. As for the potatoes, if you don’t like them or you are worried about the glycemic value, use yams, sweet potatoes or jicama in it’s place. Don’t like that there are no vegetables in this other than onions? No problem, just add the ones that you like! As to how much water, that kettle looks like it has a good 4-6 cups of broth in it. (With 4 cups of meat, I’m willing to say that it has at least 6 cups of broth, possibly even more.) Adjust according to your taste, starting with the smaller amount and add more to dilute if necessary. Hope that helps some of you out!

They mean a quart jar of home canned beef. If you don’t have that, as most of us don’t, then sub an approx amount of hamburger or cooked cubes of beef.

I’m wondering if the 1 qt of beef means beef stock since they talk about beef soup base in the directions. Might also be good with chicken.

My grandmother made something very similar that we call potatoe soup. We brown hamburger and onions together with salt and pepper. Cubed and cook potatoes. And regular noodles. Add all together after you have drained the hamburger and onions. Just use the water from the noodles and potatoes.

You would find the beef at the supermarket or meat market and if you ever cooked before you would know PROXIMITLY how much beef to use. USE your best judgment.

I’m guessing that there is a major typo in this recipe, and possibly a missing ingredient? As others have repeatedly asked, what the heck is a “quart of beef”? My guess is, since there is no liquid listed in this recipe, that it should have read “a quart of beef broth”. However the picture appears to have neat in it. So then you would still need a separate ingredient, stating shredded or ground beef, and how much of it.

They can their own beef in quart jars. So the equivalent would be browned beef about 1 1/2 pounds, left over roast beef, or pressure cook a chuck roast to supply the 32 oz of meat and broth.

What they mean by a “quart of beef” Is literally a quart of home canned chunked beef pieces…Like stew meat. A lot of country people can meats in Mason jars to preserve it. It’s very very good and tender. If you can’t find this try pressure cooking stew meat then put meat and juiced on the soup.

Coming from the Amish background, many of them are not poor in spite of appearances. They grow much of their own food. A quart of beef is a quart of beef that they likely canned for the winter. Take a quart jar, fill it with the beef, and there it is.

Typically a quart of beef would be stew meat and a little salt canned in a quart jar…it is delicious! I believe a suitable substitute would be left over pot roast.

Is it ground beef, stew beef or roast that has been chopped up? Is the beef precooked or raw? What size potatoes or what is weight of boxed noodles? Is the onion chopped or sliced? Do you cook the potatoes, onions and noodles in beef soup base or water.

One quart of beef refers to canned beef. It is already cooked….very much a country thing and I don’t think you can get it in stores. If you don’t put up your own canned beef, you could probably use leftover pot roast or some browned ground beef – maybe 2 cups. I don’t think the amount matters.

Sub cauliflower for the potatoes and zucchini (noodles) for the noodles and you have low carb for diabetics and those watching their carb intake. I’m not a fan … But tofu chunks could work for the potato and provide another level of protein.

my mom used to process beef when we butchered on our farm, cooking whole roasts and cutting the meat into chunks and packing it along with broth into quart jars rather than freezing it as we do today when we process an entire cow or buy a half or quarter of beef from a farmer. … or maybe the beef was cut up raw and placed in the with liquid and seasonings and during the processing to seal the jars the meat was cooked, i was young and don’t know the recipe, i’ll have to research to find the recipe since she has been gone for years.

the original fast food for a farm wife, the beef was already cooked and only needed to be added to whatever recipe it was called for. mmmm!! so good too. i’d forgotten, it was so long ago. today the easiest way would be to make the recipe when you have left over pot roast that you want to use. instead of canning, leftovers could be put in the freezer until you want to make the recipe.

I think maybe the quart of beef is meant to be beef broth. I must say though the dish in photo has beef in it. I think I’m going to wing this one.

Quart of beef. Is quart size container with cut up beef ot stew meat yes most all soups sear the beef before adding it. Remember smaller pieces of beef cook faster and are more tender.. Hope this helps

I think the one quart of beef refers to a quart of beef and broth that’s been canned. I know my Mennonite grandmother canned beef after cooking it. The best way to do that today would be to get a chuck roast and cook it for a couple of hours in water (add salt too) until it’s very tender. Remove the meat, let cool a bit to handle and pull it apart. Save the cooking liquid (stock) and use one quart of the meat and stock as the base for this soup. If have more than a quart of stock, or it doesn’t have enough flavor, reduce it down to a quart. Hope this helps!

to me a quart of beef is a canned beef. The Amish often can meat as in pressure cooking because they didn’t have freezer in the old day. I grew up on a farm and when I was little my mom didn’t have a freezer. So, most things were canned or put into a food locker in the “city”. I think this what is meant.

I personally would not make something so carby and starchy, as it seems very unhealthy…but I can see it tasting good! Although, what the heck is a “quart of beef”? Stew meat? Roast? Burger? Put into a jug and measure a quart?

I would assume they are using canned beef which is processed by cooking and putting up in quart jars old-style. That would cut down on the cooking time for the recipe also!

My grandmother who was vegetarian, made one almost exactly like it (without the beef of course). Keep in mind that the noodles are also homemade (with a lot of eggs in the batter), thus this soup is full of protein. Taking this recipe back in history, not many vegetables were readily available in the middle of winter. Root vegetables were all that people had in their root cellars. Carrots, potatoes, beets and maybe onions and cabbage if you were lucky. Freezers did not exist. So, recipes were created out of what was readily available. I still make this soup on occasion, with homemade noodles. Sometimes simple is best!

A lot of country folks can their own beef, pork, chicken and fish. So if you do not can your own beef you would need to get some store bought canned beef and add stock to make a quart. And to be a good soup for diabetics simply omit the noodles and add a couple cans of mixes veggies.

I would assume the quart of beef would be preserved, salted or otherwise. Canned at home like you would can smoked salmon and other things which is why the cook time would be short..

I think it is supposed to be “beef stock or broth” because there is no water in the recipe. But the picture shows meat in the soup — so, I don’t know. For such a simple recipe, it isn’t written very well. (Not trying to be a hater, it is just that the recipe isn’t very clear) I normally wouldn’t put potatoes and noodles in the same soup either, but you have to remember that it is Amish soup, many of them are farmers and need a good filling and hearty soup before heading out to do their work. Plus, sometimes when your stomach isn’t feeling well, this would be very comforting to one’s tummy.

Since the Amish can their beef in Jars I would imagine you are talking about a pound and a half. This recipe is very simple so the best way would be to use the listed ingredients in the amount you want.

This is similar to the ground beef hash my mother-in-law taught me to make when my kids were little and we had to stretch every penny, except no noodles. Basically it was peeled & cubed boiled potatoes, and when they were almost done, you add raw crumbled ground beef to the pan (no draining) and cook until the beef is done. Salt & pepper well. Easy peasy. My 35 yr old son, recently asked me how to make it.

We did this when I was a kid growing up in Iowa and we would butcher, pork or beef. We weren’t Amish, just maybe poor and didn’t even know it. We also canned chickens, rabbits, and extra meat we had before freezers were avail and sure easy to fix a quick dinner….

We used to can beef when we butchered a cow. It’s cooked and put through a canning process just like vegetables. It’s real tender and tasty.

Did it seriously take since Dec 2016 to figure out what canned beef is and whether they meant meat or broth. 5 comments into this thread and one should be able to understand what was meant. If you don’t like what’s in it, simply revise it to fit your taste and needs. No need for anyone to get snippy when someone wants to change it. Different strokes for different folks. I plan on trying this just as soon as the weather cools down. I’m not saying if I am making as is or improvising. I don’t want to offend anyone’s sensibilities. This looks very much like a beef version of “Pot Pie”here in Pennsylvania. Simple and hearty. No it’s not a pie, but Pot Pie in PA Dutch country refers to the noodles and the soup we make from it. The reason the Amish made such a caloric thing is that they exercised all all those calories away. Not in a gym or in running shorts, but in hard work from before sun-up to well after sundown. Grammy always said, “Hart verk never killt no-one.”

All that negativity over a recipe you can do anything you want to or not even make it if you don’t want. If you have a problem with it, I am sure there are dozens of other beef soup recipes on the internet you could try. Someone sure pissed in a lot of people’s cornflakes this morning
