Juicy, Honey Dijon Chicken. It’s What’s For Dinner!

This is really an awesome tasting chicken. Most anytime I make it I have to double the recipe cause they want 2nds for sure!

Well, this was one of the tastiest meals, sooooo simple and sooooo easy to cook! I didn’t have an Italian seasoning mix so I added 1/2 tsp oregano and 1/2 tsp of tarragon. The meat was very tender, we ate it with broccoli and basmati rice, delicious.

Not sure what it is about Dijon mustard that makes meat tender. Is it those little peppercorns in there? I don’t know but I am in the habit of not questioning perfection. I never have any leftovers with this meal – and I wish I did so I could enjoy it for lunch next day. Oh well, at least my family has happy bellies!

 

 

Ingredients

2 Tbs. Argo cornstarch

1 3/4 C. College Inn chicken broth

1 1/2 Tbs. Mountain Ridge honey

1 Tbs. dijon-style mustard

4 Tyson boneless chicken breast halves

1 large carrot, cut into 2 to 3 inch strips

1 medium onion, sliced

4 C. hot cooked rice, cooked without salt and with chicken broth instead of water.

 

 

Instructions

Mix cornstarch, broth, honey and mustard.

Cook chicken in nonstick skillet until browned.

Add carrot and onion.

Cover and cook over low heat 5 min. or until vegetables are tender-crisp.

Add cornstarch mixture.

Cook and stir until mixture boils and thickens.

Serve with rice.

These recipes sound delicious! My printer will not let me print the recipes so I hand wrote one for future trial. I would like to have this website added to my emails, but don’t know how to make this happen.

Is this recipe supposed to include Italian seasoning? There is a comment at the top of this page about substituting tarragon and oregano for Italian seasoning, but I don’t see this in the list of ingredients.
