Big Flavor In This black Bean And Salsa Soup!

 

This soup is a great entree on any night of the week. I’ve even used it as a dip before for nachos. All you do is sue a little less liquid so that the soup comes out nice and thick. think chili consistency.

 

One thing is for sure, when this soup is cooking the entire neighborhood will be blessed with it’s spicy aroma. Expecta  few dinner guests to come wandering over to your place lol!

 

 

Ingredients

1 pkg ( 16 oz ) dried black beans

College Inn chicken broth or water to cover

1 large jar of salsa- I used medium spicy

1 large onion chopped

1 cup diced celery

seasonings as desired ( garlic powder, salt, pepper, cilantro etc )

 

 

 

Instructions

Into a large crock pot place the dried beans, salsa, onions and celery

Cover with liquid of choice about 3 inches over the top of everything

Slow cook low 8-10 hours until everything is tender

Season as desired

Optional: Hand blend the soup partially for desired texture

Note: one can add carrots, bell peppers, in addition if desired

Garnish the soup with a dollop of sour cream and sprinkle with fresh cilantro if desired
