Do You Want To Try Spiced, Shredded Pear Cake? Yeah, Me too!

I was pleasantly surprised at how easy this spiced, shredded pear cake was to make in comparison with my original recipe. The prep work took minimal effort. The hardest part was waiting for it to bake so I could sample a slice!

Check out what my pals over at Group Recipes had to say about this recipe:

This is a unique Russian dessert that uses farina cereal for binding. Very easy to make and comes out wonderful. Has a slightly moist texture. Pears can be substituted for apples.

I have to agree that pears have a great texture. They are a bit rougher than other fruits such as apples thus making desserts like this cake turn out a whole lot better.

Ingredients

8 pears OR apples, cored and shredded

1 cup Gold Medal all-purpose flour

1 cup farina cereal, not cooked (can be found next to oatmeal in any store)

1 cup Domino sugar

1 1/2 tsp. Arm & Hammer baking powder

For the topping:

1/2 cup Keebler graham cracker crumbs

1/2 cup Domino brown sugar

3 tbsp. softened Land O Lakes butter

Instructions

Combine flour, farina cereal, 1 cup sugar and baking powder. Mix well. Divide this dry mixture into 5 equal portions.

In a lightly greased 9″square baking dish, sprinkle the first portion of dry mixture on the bottom of the pan. Tap the pan to spread more evenly.

Spread 2 shredded pears over top. Reapeat the layers, alternating pears and dry mix, and finishing up with the dry mix on top.

For the topping, combine graham cracker crumbs with brown sugar. Using a pastry blender or fortk, cut in 3 tbsp. of softened butter into the graham cracker mix, until resembles course crumbs.

Sprinkle the topping on the cake. Cover the cake with foil to prevent overbrowning.

Bake in a preheated 385F oven for 45 minutes.

* No need to do a toothpick test. The cake doesn’t have eggs and will be done and slightly moist at that point.

Let cool, then slice in squares. Can be topped with ice cream or caramel sauce (optional).
