Do You Look Forward To Dessert As Much As I Do? Try This Strawberry Tiramisu Recipe!

As I mentioned above, this recipe looks so much harder than it is.  I always thought Tiramisu was a long, complicated process to make, but I was blown away by how easy it was.  What makes it so simple is that it’s just a layered, no bake pastry really.  You soak the lady fingers in espresso, and then layer it with the mascarpone and whipped cream mixture.  Top it off with a little cocoa powder and you’re done!  It is truly fool-proof.

Something to keep in mind with this dessert is that the longer you keep it in the fridge, the better it tastes.  I’ve made this a couple of times.  Once I made it about 5 hours ahead for dinner, and while it was absolutely delicious, the next time I made it a day in advance and it was even better.

The longer the lady fingers soak in the fridge, the softer they become and the prettier it is to serve.  Give it the time it needs and the results will be amazing!

 

 

Ingredients

1 pound of fresh and ripe strawberries

16 ounces mascarpone cheese

2 packages of lady fingers

2 containers of Cool Whip, the extra rich variety

2-4 ounces rum or strawberry liqueur

Optional addition of shaved white chocolate

 

 

Instructions:

Clean and slice strawberries.

Line the bottom of a 9×13 inch pan with lady fingers.

Sprinkle the rum or liqueur sparingly over the the lady fingers saving half for the next layer.

Mix 1 container of the Cool Whip with the mascarpone cheese until blended.

Spread 1/2 of the cheese mixture over the lady fingers.

Top with strawberries.

Add another layer of lady fingers and sprinkle with more liquor or rum.

Spread the rest of the cheese mixture and add another layer of strawberries over that.

Top with second container of Cool Whip and at this point, you can decorate the top with any remaining strawberries and add some shaved white chocolate.

This can be made WITHOUT any alcohol and is just as good.

Refrigerate overnight or for at least 4 hours before serving. You can even freeze this. You have to thaw it overnight in a refrigerator before serving or you can slice it while its frozen.

Quick Tip: If you don’t have mascarpone cheese readily available, here’s a good substitute: cream together 6 oz. softened cream cheese, 2 tablespoons sour cream and 3 tablespoons heavy cream.
