Who here enjoys a nice, big old scoop of country potato salad? I’m sure if I could see your hands, none of them would be resting on the keyboard right now. I, for one, love potato salad. It is my favorite side dish at any BBQ or picnic. I am very picky about how my potato salad is made and I’ve gotta tell ya, this copycat version of Thomas’s BBQ potato salad won over my taste buds. It is super easy to make and oh so good!
This potato salad calls for sweet pickle relish. Now, normally, the thought of adding sweet pickle relish to anything would make me gag. I don’t even like the stuff on my hot dog. However, this sweet pickly delight added a certain flair to the potato salad that I really enjoyed. You can, however, add dill relish to your potato salad if you want.

Quick Tip: Thomas’s BBQ potato salad does not contain any eggs, however, I love boiled eggs and added them to my potato salad. Feel free to do as you wish.
