7. Greek Potato Salad
Tender taters in a red wine and lemon flavored dressing with all the right seasonings sets this potato salad apart from any that you’ve ever had before. It’s such a nice switch from the usual! I love it as a side to a simple turkey sandwich, or if you were feeling very Greek you could throw together a gyro and have a total meal!
One fun thing is taking this to a potluck and seeing the reaction on people’s faces. It resembles a German potato salad and the flavors surprise them. You can hear them saying, “Ooh! This is good!” Then they go in for seconds. So if you’re looking for an easy hit, try this one on for size! Get your recipe cards ready because everyone is going to be asking for it. Of course, I wasn’t prepared so I was texting everyone by memory – haha!
