Roasted Carrot Recipe That’ll Knock Your Socks Off

I am loving these sweetly roasted carrots and so will you!

This is what The Pioneer Woman said about these yummy carrots:

” We’ve all heard the myth that eating lots of carrots can give you super-strength eyesight, but did you know that it’s mostly true? Low levels of Vitamin A in our diets can cause poor eyesight. Carrots are rich in Vitamin A. Turn up your carrot intake and you just might see the quality of your seeing ability increase. Don’t go overboard eating carrots though or your skin could turn orange…”

This is so true about the skin turning orange. My sister fed her baby carrots for an entire week and her little nose turned orange!

 

Ingredients

12 Carrots

1 Handful of Fresh Thyme

1/4 Cup of Bertolli Olive Oil

 

Instructions

Arrange the seasoned carrots onto your sheet pan in whatever obsessive compulsive manner you feel comfortable with and slide them into a 400 degree oven for 35-40 minutes.

When I click “Next Page” it takes me to another recipe? Is this the only page for the carrots? I guess what you do is just make sure the olive oil is rubbed all over them and add the thyme? Thanks.
