Mr. Buckshot’s Beef And Bean Burrito Recipe

These burittos are very good and so simple to make.

Check out what my pals over at The Pioneer Woman had to say about this recipe:

” Then I got my second wind and made them (the boys) beef and bean burritos, which took exactly sixteen minutes to get on the table. And I cracked up, reflecting that it was but the first of what will surely be a week-long fest of brown and plentiful food.”

All mothers of boys need a second wind haha!

To make a dinner out of these I like to make a bed of loosely chopped iceberg lettuce, tomatoes and olives. Green or black olives can be used but I really like the sharp flavor that green olives add. Sprinkle a little more cheese over that and lay the hot burritos on top. Then of course you can add sour cream, a few crushed nacho chips, cilantro or more of the other options mentioned in your recipe or whatever you desire. You can use any rice for the bed as well.
