Ingredients
5-6 strips of Hormel bacon
1 head cabbage, sliced
1 onion, diced
¼ cup College Inn chicken broth (I use low-sodium broth)
1 tsp Heinz vinegar (optional)
½ tsp Morton salt
¼ tsp McCormick pepper
Instructions
In large skillet, (I use cast iron) fry the bacon until crispy, remove to a paper towel to drain
Place chopped cabbage and onion in the skillet with the bacon fat over medium heat and cook until it begins to wilt a bit
Crumble the bacon and add to the pan
Add in the chicken stock,vinegar, salt and pepper, cover and allow it to simmer for 10 minutes
Serve hot

You don’t specify which Vinegar to use, White or Red.

We call this Indian fried cabbage (without the broth). My grandmother, mother and I have been making it for years and we are from northern BC Canada!!!!

I made this tonight but i used a can of diced tomatoes and sausages
Do as it says but use Stir fry seasoning sauce in place of most of the broth.
My grand-mother use to make this recipe when I was young. She made it without the liquid, and she added cooked rice and soya sauce. She called it ‘Bacon and Cabbage Fried Rice’. I loved it.
It sounds a lot like what my mother used to make. She was from Scotland and I think it was quite popular there. I loved it. They called it “Bubble and Squeak. “
I throw in Red & White potatoes in . delicious.
