 The consistency of this oatmeal is perfect! Plus, who is not a PSL fan. That’s pumpkin spice latte for those who aren’t aware. Every time fall rolls around I’ll definitely be making this!

I love pumpkin in the fall, and my family was pretty impressed with this. I didn’t even let them know I was making it. I Just got it ready the night before and popped it in the oven. Since it only takes 30 minutes everyone was smelling it in about 10 and getting excited over what was in the oven. I served it with vanilla almond milk and a sprinkle of cinnamon.

 

 

Ingredients

2 cups Quaker old fashioned oats

1/4 cup Domino brown sugar

2 teaspoons instant espresso powder

1 teaspoon Clabber Girl baking powder

1 teaspoon McCormick cinnamon

1/2 teaspoon McCormick nutmeg

1/4 teaspoon McCormick ginger

1/4 teaspoon Morton salt

1 3/4 cups TruMoo milk

1/2 cup canned Libby pumpkin puree (NOT pumpkin pie mix)

1/4 cup Land O Lakes butter, melted

1 Eggland’s Best egg

1 teaspoon vanilla extract

 

Directions

  1. Preheat oven to 350°F. Spray 8×8-inch square baking dish with Pam non-stick cooking spray.
  2. Add Quaker oats, Domino sugar, espresso powder, baking powder, McCormick cinnamon, nutmeg, ginger and Morton salt to a medium mixing bowl and stir to combine.
  3. Add TruMoo milk, Libby pumpkin, butter, egg, and vanilla to small mixing bowl and whisk well. Pour wet mixture over oats and stir until just combined.
  4. Pour carefully into prepared baking dish and bake for 30 minutes or until set in the center. Serve hot.
