#1 BBQ Beef Cornbread Casserole

I was never much of a cornbread casserole person.  I actually just didn’t eat much corn in general.  That is, until I met my husband. He is obsessed with corn and wants it on everything. He introduced me to this fabulous BBQ beef cornbread casserole, and everything changed! I couldn’t believe how great the flavors of this casserole meshed together.

To put it simply, this cornbread BBQ beef casserole is delicious. One day he asked me to make him cornbread casserole, but I had never made it so I wanted a quick and easy recipe.  After searching for a bit, I found this recipe that is made in under an hour with just 5 ingredients.  It can’t get much simpler than that!

 

Ingredients

2 lb ground beef (I use 93/7 so no need to drain fat)
1 large onion, diced
1 green bell pepper, seeded and diced
10 oz can whole kernel corn, drained
1C your favorite BBQ sauce
14.5 oz can diced tomatoes, drained
2 pkgs corn bread mix (to prepare, may need eggs/milk depending on brand)

 

Instructions

1. Brown meat (drain grease if needed.) Add onion and green pepper. Cook until vegetables are tender. Add corn, BBQ sauce and tomatoes.

2. Prepare corn bread batter as directed.

3. In 9×13 casserole dish, pour beef mixture on bottom and spoon cornbread batter on top, smoothing out to cover beef mixture.

4. Bake in 400 degree oven for 25 minutes or until toothpick inserted in center of cornbread comes out clean.

I make this all the time, but spice it up just a tad. I use 2 cans of Rotel (original) tomatoes with green chiles, and add a couple of Hot Italian Sausages (removed from their casings) in with the plain hamburger (instead of ground turkey). It is a wonderful recipe and I can use the leftovers for lunch for my mom (94) and me through the rest of the week.

This isn’t the recipe in the picture…. What else has been done to it. Looks like cheese and in the sandwiches and then cheese on top of them and toasted??

I can find the recipe, but it looks like the buns or biscuits are cooked on top with cheese on them, and there is no mention of it other than adding the meat mix to the buns. I want what looks like in the picture.

Lots of good looking recipes but a poorly designed website you have to click through and read everything several times to find the one you want. Not like most where you click the picture and get the recipe.

I make Unstuffed Cabbage Rolls all the time. If in a hurry I use a Pressure Cooker. Made this & a few others when my son was so I’ll with cancer. I still make them but not as much . They are very warming on a cold winter day or in fact any day.

Jessica, I don’t know what the problem is. So we skip through a couple good recipes to get to the one pictured. No big deal. Sounds and looks delicious! I’m going to make it tonight. Thanks. Carol
