Do You Want To Feel Important Today? Make This Meatloaf!

Take a look at what the folks over at Pass The Peas Please have to say about this wondrous Italian Meatloaf recipe:

 

I usually have ground chicken that I am trying to “hide” in meals because it’s not a family favorite so I was drawn to this recipe, but instead I have 3 lbs of ground pork that I am trying to use up, so I am making this with half beef, half pork. I am so looking forward to dinner! If I were being really kind I’d make potatoes for my husband (he’s truly a meat and potatoes man), but he’s getting noodles (and roasted asparagus) instead. I have a feeling I won’t hear any complaints!

Ingredients

1 pound extra lean ground beef
1 pound ground chicken
1 egg
1/2 cup Italian breadcrumbs
8 ounces tomato sauce, divided
1 teaspoon oregano, divided
1 cup mozzarella cheese
1/4 cup Parmesan cheese

Instructions

In a large bowl, combine ground beef, ground chicken, egg, breadcrumbs, 1/2 cup tomato sauce and 1/2 teaspoon oregano.  Make sure the ingredients are mixed well.  Take a rectangular piece of wax paper and place it on the counter.  Dump the meat out of the bowl and onto the wax paper.  Spread the meat onto the wax paper and pat and shape into a rectangle- 8×15.  Spread mozzarella cheese on top of meat.  Starting at one end, roll the meatball into a loaf.  Place into a greased loaf pan.
Bake at 350 degrees for an hour.  Ten minutes before it’s done pour the rest of the tomato sauce over the meatloaf and sprinkle with Parmesan cheese.  Continue baking for 10 minutes more.

Quick Tip: If you prefer, ground turkey may be used in this recipe versus the ground chicken.

Prego is an option I’d leave out but I do add 1/2cup ketchup and 1/2cup water. I prefer my meatloaf less dense and this was rather answer for me

Had left over tough steak. Chopped it up plus 2 strips of bacon chopped. In crockpot put 1 chopped onion, 1 package brocolli slaw, 4 cans beef broth, 1 can diced tomatoes, 1 potato diced. Add beef and bacon, cook on high for 30 minutes. Add 1 cup of pasta, your choice. I used wide noodles, 1 cup. Cook another 10- 15 minutes.
