Dump Dinners May Not Sound as Awesome as They Are – Try This One and Be a Believer!

Check out what my friends at Stockpiling Moms had to say about this Cilantro Lime Chicken:

I have a huge amount of people coming for the holidays and this recipe will be a lifesaver between working and entertaining. Put it in the crockpot in the morning for dinner that night. I did what I call the cheater method. Doubled the recipes and used crockpot liners. Instead of putting them in Ziploc bags I put the liner in an empty 5 quart ice cream tub, fill it and twist tie it shut.

Delicious! Makes a ton too (BO-NUS!) for serving over rice and then later in flour tortilla shells. Was pleasantly surprised by the flavor – not your typical Mexican flavoring. Enjoyed by everyone (2 to 52)!

Ingredients

2 Tyson chicken breasts

1 bunch of fresh cilantro, chopped

1 red onion, chopped

1 can of black beans, drained & rinsed

2 cups of Green Giant frozen corn

2 tsp minced garlic

1 tsp McCormick cumin

Juice squeezed from 2 Limes

For Serving:

Old El Paso tortillas

Kraft shredded cheese

Daisy sour cream

Instructions:

Place all ingredients in a freezer bag, and freeze flat.

Thaw overnight in fridge. Dump in the slow cooker and cook on LOW 8 hours or HIGH 4 hours.

Shred chicken and stir mixture together.

Serve in tortillas and enjoy.

Quick Tip: You don’t have to freeze the bags; you can also just let it set in the fridge overnight.
