This Lovely Vegetable and Cream Cheese Go Together Like PB&J, Who Knew?

We loved this recipe. The only thing I did different was add a little more garlic. I love the taste. Definitely would make again.

 

What I love best about this quick, side dish casserole is that if I’ve gotten dinner going and all of a sudden wonder what I’ll serve with it this one cooks up so fast! While my husband is out grilling I can make it inside and then we meet together at our picnic table. Plus, my kids love cheese so it’s easy to get them to eat it, I just peel the zucchini first so they don’t associate it with “icky vegetables.

 

 

Ingredients

6-8 small zucchini

1 – 3 oz. pkg. Philadelphia cream cheese

3 Tbs. Land o Lakes butter

1/4 tsp. McCormick garlic powder

Salt and Pepper to taste

Nabisco Butter Crackers

 

 

Instructions:

Cut unpeeled zucchini into thin slices, microwave until just tender and still crunchy; 3-4 minutes. Drain thoroughly.
Melt cheese and butter and mix with garlic powder and zucchini; season with salt and pepper.
Put in a baking dish and crumble crackers on top. Bake for 25 minutes at 350 degrees or until golden brown.

Quick Tip: Leave this dish under the broiler the last few minutes to get it a little crispy on top.
