Indulging in This Classic Country Treat Will Make You Shout, “yeehaw!”

When I think back to the times I’ve had blueberry crisp or the classic apple crisp it was always one of the best comfort foods ever. The last time I made this particular recipe it was after my daughter had a particularly tough day at school. We had a wonderful bonding experience shopping for the ingredients at our local market, whipping it up together and then snuggling on our porch swing while we indulged and watched the dogs play in the backyard.

 

It’s moments like these I know that both she and I will treasure forever. Remember there’s nothing quite like a home-cooked treat to soothe what ails you! Cooking a delicious treat like this doesn’t have to be a chore but rather a wonderful memory to cherish for you and yours.

 

Ingredients

1/3 cup sugar

2 Tbsp. cornstarch

4 cups fresh blueberries or 2 bags (12 oz. ea.) frozen blueberries, thawed

2 Tbsp. lemon juice

3/4 cup all-purpose flour

3/4 cup Quaker old fashioned oats or quick-cooking oats

1/2 cup firmly packed light brown sugar

1/2 cup Country Crock® Spread

Breyers® Natural Vanilla Ice Cream

 

Instructions:

Preheat oven to 375°.

Combine sugar with cornstarch in large bowl. Stir in blueberries and lemon juice. Turn into 8-inch baking dish; set aside.

Combine remaining ingredients in a bowl. Gently squeeze flour mixture with your fingers to form crumbs; then sprinkle evenly over blueberries.

Bake 35 to 40 minutes or until golden and bubbling. Serve warm or at room temperature with Breyers® Natural Vanilla Ice Cream.

Quick Tip: Sometimes the dish will bubble over the sides of your baking dish, so it’s smart to place a baking sheet underneath with aluminum foil for easy clean up.
