Have great Mexican food at home with this Lazy Chicken Enchilada Casserole! It’s quick-baking and super-satisfying, but the best part in my opinion is that it really has that authentic, Mexican taste. Believe me, my husband can’t be fooled in these things – and he really loved this!

Mexican Night is an all too common occurrence in my household, particularly when the days start getting colder and we need the spicy food to make us feel warm again. All that taco assembly can get a bit tiresome, though, and sometimes you just want something a little different. The solution: throw together a yummy, creamy Mexican casserole! It’s very simple to make and it gives you all the lovely Mexican flavors you’re looking for.

Quick tip: Feel free to add some chopped onion and black beans if you want to add a bit more to the flavor depth–or if you want a vegetarian dish, leave out the chicken and just go with the black beans.
