We’ve All Had Store-Bought Rotisserie Chicken – Why Not Make Your Own?

This is what I like to call a “one-size-fits-all” recipe… Let me explain, if you’re having trouble understanding what that means! That’s what I call any recipe that can be used for different kinds of meals.

 

I have served this with rice, as well as mashed potatoes. But I think my favorite option is to use this for tacos! Since we like’m hot here in my house, I tweak the spice rub recipe a little. I add a bit of red pepper flakes and chili powder to the mix – it’s so easy to create new, delicious flavors for this!

 

 

Ingredients

  • 3 lb whole chicken, cleaned with fat removed

  • 1 tsp smoked paprika

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • 1/2 tsp garlic powder

  • 1/2 tsp dried basil

  • 1/2 tsp dried oregano

  • 1 lemon

 

Instructions:

Make several aluminum foil balls and place in the bottom of the crock pot. You can also wrap 3-5 small potatoes in the tinfoil and place those in the bottom of the slow cooker.

Mix together the spices and add the juice of the lemon. Rub the spice rub all over the chicken.

Stuff the lemon into the chicken cavity and place in the slow cooker, on top of the aluminum foil balls.

Cook on low for 8 hours.

Quick Tip: If you prefer a crispy skin, heat the oven to 500 degrees and roast the chicken for 10 minutes before serving.
