Your Favorite Bagel Breakfast Sandwich Turned into A Savory Casserole!

Made this on New Years Day for brunch and it was a hit. The bagel texture ended up being perfect on both top and bottom and it was enough food to feed 7 people (two + portions each)! I actually skipped adding the canadian bacon and thought it was just as good as an FYI. If you’re in more of a hurry, I definitely recommend cooking your bacon beforehand, but all in all, it was completely worth the wait. WILL be making this again.

Really, really good. We made it overnight for Christmas morning and so we toasted the bagel pieces (since they would be sitting in egg all night). We toasted them till they were almost like croutons–I think it really helped, not only because the texture was perfect the next morning but also to release flavor from the bagel seasoning. I didn’t do the Canadian bacon either, but it was a HUGE hit.

 

 

Ingredients

6 cups cubed (1-inch) everything bagels
1 cup shredded Italian cheese blend (4 oz)
3/4 cup sliced green onions
1 cup chopped seeded plum (Roma) tomatoes (about 3 tomatoes)
1/2 cup chopped Canadian bacon
1 cup chopped cooked bacon
8 oz cream cheese, cut into 1/4-inch chunks
10 eggs
2 cups milk
1/2 teaspoon salt
1/2 teaspoon pepper

 

 

Instructions:

Heat oven to 350°F. Spray 13×9-inch (3-quart) baking dish with cooking spray. Layer with half of the bagels, 1/2 cup of the shredded cheese, 1/2 cup of the green onions, the tomatoes, Canadian bacon, 3/4 cup of the bacon and remaining bagels. Add chunks of cream cheese on top of bagels.

Beat eggs and milk with whisk; beat in salt and pepper. Pour over bagel mixture, pressing down slightly. Sprinkle with remaining cheese.

Bake 45 minutes; top with remaining bacon. Bake about 10 to 12 minutes. Let stand 15 minutes; top with remaining sliced green onions before serving.
