How To Bring A Piece of Italy In To Your Kitchen And Your Dinner Table

While making this I love to imagine myself somewhere in the sunny Italian countryside, living in an old an cozy villa, cooking this dish using vegetables from my own garden… The reality is a little bit different (no villa an definitely no garden) but it still makes a very delicious dish!

 

 

 

Ingredients

 

 

1 whole chicken; or equivalent chicken pieces
1 can stewed tomatoes; drained
1 can tomato paste
4 cloves garlic; chopped
1 medium Onion; chopped
3 carrots; cut into 3/4″ wide pieces
2 bay leaves
1 tbsp italian seasoning
1 tbsp dried oregano
2 tsp Salt
2 tsp pepper
1/4 cup white wine
1 tsp celery seed
1 tbsp mild curry powder

 

 

Instructions:

Place chicken in the crock pot. Mix ingredients in a bowl. Pour mixture over chicken. Cook on high until dish begins to boil. Reduce heat to low and continue cooking until dinner (up to 10 hours).

If the chicken is frozen or you get a late start, do not reduce heat to low. Leave on high and cook at least six hours.

Serve over white rice.
