A No-Fire-Pit-Needed S’more Casserole

The taste of s’mores always takes me back on a camping trip in Texas… Too bad these days I hardly have time to go camping anymore – fortunately that doesn’t mean I can’t have s’mores! This creamy, delicious s’more casserole resembles an ice cream sandwich and – dare I say it, might be even better than the original ones!

 

 

Ingredients

1 box graham crackers
2 tubs of marshmallow creme 7 oz. (i used the $1.00 each generic brand from walmart and worked out great)
1 tub of cool whip (not frozen.. i left mine out for 15 minutes before using)
2 tsp. vanilla
1 bag of semi sweet chocolate chips
1 cup of heavy whipping cream
1 tsp. salt

 

 

Instructions:

Mix marshmallow creme with cool whip until smooth and creamy. Add vanilla and mix to combine.

Line the bottom of a 9 x 13″ baking dish with graham crackers. Spread 1/3 or the marshmallow whip over the crackers. Repeat the layers until they run out, topping with a layer of the marshmallow whip.

Melt chocolate chips with cream over medium low heat, keep stirring until well combined, then turn off the heat. Add salt, then whisk the mixture every 5 minutes, for 10-20 minutes until it has cooled but is still pourable.

Pour chocolate mixture on top of the casserole. Tilt the dish back and forth to coat the entire top. Freeze, uncovered, for 30 minutes, then cover and refridgerate over night. Don’t remove from the fridge until just before serving.
