Your Favorite Chip Adds a Tasty Crunch To This Cheesy Casserole

Here’s an idea our friends over at Blog Chef received from one of their readers:

I love tacos, anything Mexican! I did everything the recipe said except instead of rote tomatoes I use black bean & corn salsa, 1cup of lite sour cream and I added a can of black beans, also used cubed chicken chunks instead of shredded. Oh, and i added a cup of white rice to make it more of a meal ( starch and protein)We like spice so we used the spicy nacho doritos….we all loved it and its so easy and cheap to make this will be a favorite

So it’s really easy to change things up a bit to keep this dish fresh and new!

 

Ingredients:
2 cups shredded cooked chicken
2 cups shredded Mexican cheese blend (divided)
1 (10 oz) can cream of chicken soup
½ cup milk
½ cup sour cream
1 can Ro-tel tomatoes (drained)
½ packet taco seasoning
1 large bag Doritos
Shredded lettuce (optional)
diced tomato (optional)

 

Instructions:

Pre-heat the oven to 350 degrees. In a large bowl mix together shredded chicken, 1 cup of cheese, cream of chicken soup, milk, sour cream, tomatoes, and taco seasoning.

Grease a 2-quart casserole dish, add a layer of crushed Doritos across the bottom. Top with a layer of the chicken mixture. Add another layer of Doritos, then add another layer of the chicken mixture. Top with remaining cheese.

Cover and place into the oven and bake at 350 degrees for 30-25 minutes until bubbling hot.
