        Cake

    Caramel Sauce

  • 1 cup granulated sugar
  • 1 cup heavy cream

    Buttercream

  • 8 whole egg whites
  • 2 cups granulated sugar
  • 2 lbs unsalted butter

    Eggnog Cheesecake

  • 1 lb cream cheese
  • 3cup granulated sugar
  • 2 large whole eggs plus 1 egg yolks
  • 1cup creme fraiche
  • 1 teaspoon vanilla extract
  • 1 tablespoon Irish whiskey, such as 2 gingers
  • 2 teaspoons freshly grated nutmeg

  • Toffee Pecan Pie

  • 9 inches pie crusts (homemade or store bought)
  • 5 tablespoons unsalted butter
  • 1 cup packed dark brown sugar
  • 3 large eggs
  • 2 teaspoons all-purpose flour
  • 3cup dark corn syrup
  • 1 1teaspoons kosher salt
  • 1 tablespoon vanilla extract
  • 1 1toasted pecan pieces
  • 3cup chopped Heath candy bar, pieces
  • Assembly

Quick Tip: Turn the scraps into truffles by combining them in a large bowl with some Whiskey or Rum, refrigerate, form balls, and freeze!
